What is Mixed Millet Drumstick Leaves Dosa ?
This is a healthy, fermented, and nutrient-dense dosa made from six millets, urad dal, and moringa leaves. The batter is soaked, ground, and fermented, then spread onto a griddle, sprinkled with moringa leaves, and cooked.
Moringa is called “the destroyer of all diseases” in Ayurveda . Its leaves contain seven times more vitamin C than oranges and four times more calcium than milk.

Step-by-Step Recipe
Step 1: Soaking
Wash all the millets in one vessel and urad dal + fenugreek seeds in a separate vessel and soak them in water for 8-10 hours (overnight).
Soaking separately makes grinding easier and fermentation better.
Step 2: Grinding
Drain the water from the soaked ingredients. First grind the urad dal and fenugreek, then grind the millets. Mix them together. Keep the consistency like regular dosa batter—not too thin, not too thick.
Step 3: Fermentation
Cover the batter in a large container and place it in a warm place for 6-8 hours. Once fermented, the batter will puff up, bubbles will appear on top, and a slight sour aroma will develop. Then, season with salt.
Fermentation produces Lactobacillus bacteria which improve gut health and increase Vitamin B12 .
Step 4 : Making Dosa
- Heat the pan , apply some ghee/oil
- Spread a ladle of batter in a circular shape
- Sprinkle fresh drumstick leaves over it and press lightly.
- Pour ghee on the sides and cook for 2-3 minutes .
- Flip when the bottom is crisp and cook for another 1-2 minutes.
