How to make Assam Mix (Step-by-Step Recipe)

Assam mix is ​​very easy to prepare   and  can be made at home in any kitchen  . Follow the step-by-step method below:

Step 1 – Roast the ingredients separately

 Roast  all the ingredients  separately in a  heavy bottom pan  or  tawa  on  low flame :

  • Rice  – until lightly golden and crispy (5-7 minutes)
  • Moong dal  – until golden and fragrant (4-5 minutes)
  • Sesame seeds  – until lightly browned and crackling (2-3 minutes)

Note: Stir constantly  during roasting   to prevent any ingredients from burning.   Dry roasting is done  without oil . This process removes moisture  ,  increases shelf life  , and   improves flavor and aroma .

Step 2 – Let it cool

Spread all the roasted ingredients   on  a plate or tray and  let them  cool completely . Never put hot ingredients into the grinder  —this can make the powder sticky and create moisture, which   will ruin the quality .
